Characteristics of chestnut honey
Chestnut honey is produced from the nectar collected by bees during the flowering of Castanea sativa. Its colour may vary from amber to dark amber, depending on the area of production and the characteristics of each harvest.
It has an intense, penetrating and easily recognisable aroma. Its flavour is bold, not overly sweet and pleasantly bitter, with distinctive woody and tannic notes.
It generally remains liquid for a long time, although it may develop large crystals. Crystallisation is a natural process and does not affect the quality of the honey.
How to use it in the kitchen
Thanks to its intense character, chestnut honey pairs particularly well with mature cheeses, pecorino, roasted or grilled meats and dried fruit and nuts.
