Citrus Honey
It is a purely southern honey, as it is produced from the nectar of the Zagara flowers found mainly in southern areas of Italy.
The flowers belong to the genus called Citrus, which includes orange, grapefruit, mandarin, lemon, cedar and bergamot. As soon as it is produced it is very clear, of an almost transparent straw yellow. After crystallization, on the other hand, it appears white or light beige.

Characteristics of citrus blossom honey
Citrus blossom honey is produced from the nectar collected by bees during the flowering of orange, lemon, mandarin, clementine and other citrus trees. It has a very pale colour that tends to become white after crystallisation.
Its fresh, floral aroma is reminiscent of orange blossom. On the palate, it offers a sweet and aromatic flavour with pleasant floral and fruity notes.
Over time, it may crystallise naturally, developing a firmer and more granular texture. Crystallisation is a natural process and does not affect the quality of the honey.
How to use it in the kitchen
Citrus blossom honey is ideal for sweetening tea, herbal infusions and yoghurt or for enjoying with bread, desserts and fruit salads. Its aromatic profile also makes it suitable for preparing sauces, glazes for roasted meats and sweet-and-sour dishes.
It pairs particularly well with strongly flavoured cheeses such as caciocavallo. Its colour, texture and aromatic intensity may naturally vary from one harvest to another.
