Speaking of the first category of honey, it should be known that the nectar produced by bees includes a vast category of flowers found in the plains. For this reason, smell and taste may vary. The collection, as suggested by the name, takes place in the spring and is produced until June, July. It shows itself in a light, almost golden color.

Characteristics of dark multifloral honey

Dark multifloral honey is produced from the nectar collected by bees from numerous plant species growing and flowering in the same area. The particular combination of blossoms gives the honey a colour that may vary from deep amber to dark brown.

Its aroma is rich and persistent, with possible notes of caramel, malt, dried fruit and vegetation. Its flavour is full and aromatic, generally less delicate than lighter multifloral honeys and characterised by a lingering aftertaste.

Its texture and crystallisation time may vary according to the predominant blossoms and the characteristics of each harvest. Crystallisation is a natural process and does not affect the quality of the honey.

How to use it in the kitchen

Thanks to its bold flavour, dark multifloral honey pairs particularly well with mature, strongly flavoured cheeses such as pecorino, Grana and Taleggio. It is also suitable for enjoying with dried fruit and nuts, rustic bread and dark chocolate.

It can be used in sauces, marinades, sweet-and-sour dishes, biscuits and spiced desserts or to sweeten coffee, tea and other drinks, adding an intense aromatic note.

Each harvest has its own distinctive characteristics, so its colour, texture and aromatic profile may naturally vary from one year to another.
